- Heat a large skillet over medium heat. Cook the onion and garlic until fragrant and softened.
- Stir in the rice and taco seasoning. Cook for 1 minute to toast the rice.
- Add the diced tomatoes, corn, black beans, and chicken broth. Mix well.
- Bring everything to a gentle simmer, cover with a lid, and cook until the rice is tender and the liquid has been absorbed.
- Stir in half of the shredded cheddar cheese until melted and creamy.
- Sprinkle the remaining cheddar cheese over the top and add sliced jalapeรฑos.
- Cover for 2โ3 minutes until the cheese is fully melted.
